Cast Iron Chicken Thighs

Ingredients

  • 2 lbs chicken thighs
  • 1 yellow onion
  • 3/4 cup Zatar
  • 1 tablespoon minced garlic
  • 1 1/2 tablespoon minced ginger
  • 1 tablespoon coriander
  • 1 tablespoon cumin
  • 1 tablespoon black pepper
  • 1/4 cup rice wine vinager
  • 1/3 cup soy sauce
  • 1 tablespoon honey

Prep

  • Marinade chicken thighs in dry seasonings (zatar, coriander, cumin and black pepper) for 30 minutes or more. Make sure they are evenly coated.
  • Mince garlic and ginger
  • Chop onion
  • wisk soy sauce, rice wine vinager and honey together.
  • Turn oven on to 400 degrees.

Steps

  • Add olive oil to your cast iron pan and get it HOT. Put your chicken thighs in the pan and brown them until they have deep, rich colors. Then remove them from the pan.
  • Turn the heat down and sautee onion for 7-10 minutes until caramelized and sweet
  • Add ginger and garlic. Continue to cook for a minute or so
  • Add chicken thighs and rice wine vinager/soy sauce/honey mixture.
  • Slide your cast iron in the oven.
  • Cooking time will vary depending on how thick the thighs are. I like to check after 5-7 minutes or so. Every time you check, take a spoon and drip some of the sauce from the pan over the thighs.
